Fresh coffee beans brew better coffee. If stored properly, freshness can be extended for a while but not for a long while. The things to avoid include extreme temperatures, moisture, and oxygen. Oxygen is a little tricky but not impossible. So, do these things: - Purchase beans which have been bagged right after roasting. Coffee beans give off CO2 after roasting. If bagged right away, this fills the bag with CO2 which is heavier than air and rests like a liquid in the bag and keeps out oxygen.
- Scoop beans from bag, with a scoop. Imagine that the CO2 is water in the bag. You want to scoop the beans out of the water without spilling it. Remember, that CO2 is keeping oxygen out.
- Keep beans in the bag.
- Keep the bag in a cool dry place.
Avoid these things: - The freezer. It is too wet in there. There are also other smells that will get into your coffee.
- The fridge is bad too.
- Pouring beans from the bag will also pour out all of the CO2. The oxygen will get to the coffee and make it stale.
- Direct sunlight and heat sources like toasters or heat vents.
